José Manuel Bento dos Santos has been an Industrial Chemical Engineer at the Instituto Superior Técnico (IST) since 1970. From a very early age his deep interest in discriminating taste has been noticeable, devoting his life to the in-depth cult of gastronomy and cooking itself, and applied his knowledge to the discovery of the perfect harmonies between wine and food. In his continuous travels he had the opportunity to go to the most famous restaurants and to contact and practice with great cooks from all over the world. At the same time, he had the privilege of knowing and tasting the most exquisite wines. He started his wine collection over 30 years ago, actively participating in Christhie’s or Sotheby's auctions and through direct contact with some of the world's most renowned producers.
